King oyster mushroom, also known as Pleurotus eryngii, is a large, meaty mushroom with a thick, firm stem and a small, rounded cap. The stem is creamy-white, while the cap ranges from light brown to tan. It has a mild, slightly nutty flavor and a dense, chewy texture, making it a popular choice in vegetarian and vegan dishes as a meat substitute. King oyster mushrooms are valued for their ability to absorb sauces and seasonings while retaining their structure during cooking.
Growing Method
King oyster mushrooms grow best in a controlled environment with temperatures between 20°C and 25°C and high humidity. They are commonly cultivated on sterilized substrates made of sawdust, straw, or other organic materials supplemented with nutrients. The mushrooms require indirect light and proper ventilation for healthy growth. Fruiting occurs after the mycelium fully colonizes the substrate. Harvesting is done by cutting the mushrooms at the base of the stem when the caps are fully developed but before they start to flatten or crack.

King oyster mushrooms are low in calories and fat while being a good source of protein, dietary fiber, and essential minerals such as potassium, phosphorus, and iron. Storage and Care
King oyster mushrooms should be stored in a paper bag in the refrigerator to prevent moisture buildup and maintain freshness. They are best used within 5–7 days of purchase. Avoid washing the mushrooms until ready to cook, as excess water can make them soggy. If the stems become soft or the caps start to wrinkle, the mushrooms are past their prime and should be discarded.
